Recipe for: Vegan Chocolate Truffles

Vegan Chocolate Truffles
2 cups Medjool dates, pitted
1⁄2 cup bittersweet chocolate, finely chopped
2 Tbs coconut oil, softened
2 Tbs unsweetened cocoa powder, plus more for dusting
1 tsp kosher salt
1/3 tsp cinnamon
1/4 tsp cayenne

NOTE: If you can’t find fresh dates, soak the packaged dates in hot water for 10 minutes, then dry completely. This will help soften them.

1. Pop everything in a food processor, and pulse together into a paste. With lightly oiled hands, roll the paste into small balls. Roll in cocoa powder to finish.
