acidity

The tart or sour sensation felt on the sides of your tongue. Think about what it feels like to bite into a slice of lemon, or about citric acid (grapefruit) and malic acid (green apples); these can be helpful in describing acidity. Acidity plays a major role in a wine’s structure by balancing out the fruit. Light crisp whites like Sauvignon Blanc are great examples of good acidity.
